Pea and Chives Soup

Whenever my family and I have soup, my mother always reminds me how much I loved eating soup growing up. To this day, it’s my favourite comfort food. What I really enjoy about soup is that it’s hard to mess it up, and it doesn’t have to be overly complicated to create. This recipe takes no more than 30 minutes to make. And it doesn’t require a massive shopping list.

Ingredients:

2 Tbsp of olive oil
3 chopped leeks
2 cups of fresh peas (or frozen)
3 cups of vegetable broth
1/4 cup of chives (plus extra for garnishing)
1 tsp of nutmeg
Sea salt and pepper to taste
pea shoots (optional)

Instructions:

In a large saucepan over medium heat, add olive oil and leeks. Let leeks soften for about 4 minutes. Then add the peas. Let peas soften for 1 minute. Then add all of the broth to the pot. Let simmer on medium heat for 15 minutes or until peas have soft. Add 1/4 of the chopped chives and add in nutmeg. Stir and let simmer for 2 minutes. Then transfer the soup into a Vitamix blender or food processor and blend until a smooth purée.

When ready to serve, ladle the soup into individual bowls and garnish with chopped chives and pea shoots.
