Potato + Leek Soup

Baby it’s cold outside!
Super duper cold!!!!
While on my commute home, I instantly thought of a homemade soup. I instantly knew this would warm me right up. I wanted to make something that would be quick and easy, so then I could spend more time near the fire with a tea and/or hot chocolate the remainder of the evening.

As such, I created a Potato + Leek soup.

Ingredients:
2 tablespoons olive oil
3 Yukon gold potatoes (washed and peeled)
3 leeks (sliced)
1 small onion (diced)
2 cloves of garlic (chopped)
4 cups of vegetable broth
Freshly ground pepper
Pinch of Sea salt
Parsley (optional)
Cayenne pepper (optional)

Method:
In a large pot, add olive oil, leeks, onions and garlic and let simmer for 7 minutes, then add potatoes and mix. Immediately thereafter add the vegetable broth and season with sea salt and pepper. Let simmer for 12 minutes.
Then transfer soup into a Vitamix blender or food processor and blend until smooth.
Laddle into bowls and garnish with parsley and cayenne pepper.
